Dear Steve,
Try removing the tape as soon as you've finished painting, before the paint has had a chance to dry properly. Any edges that form should be a bit softer. That won't work so well if you are applying multiple coats of acrylic, though.
Or you could wait until the paint has totally hardened, and then go over the edges with a very fine sanding or polishing stick, used with water to take off the raised step.
