Sorry, couldn't resist. About the only thing that can be said on this subject is that, having grown up in a family that built and restored furniture, cedar is probably not a good idea for model ship planking...

Cherry in principle is a good wood for such purposes. The width of the planking depends on the prototype and its absolute size. The scale is irrelevant. You will need to do some research on the actual vessel to find out the width of the planking that may have been used.
