amiers, I normally thin my paint (BTW, are you using enamel or acrylic?) to between 50/50 and 70/30, depending on the paint. Some seem to be inherently thinner than others by nature. And, I use enamel exclusively. I use either an Iwata HP-CS with a medium needle, or a Badger 150 with a medium needle, and set my air pressure around 12 - 15 p.s.i.. I prefer to lay down thin coats, allowing a few minutes drying time between each coat, then lay down another thin coat until I have the coverage I want. As far as over spray, you need to plan your painting out in advance. If you angle your brush correctly you can sometimes eliminate over spray, and even use the contours of the model to "self mask". But, in other cases the only way to totally eliminate the risk of over spray is to mask anything and everything that might be subject to it.
