This thread came about as I have the new HobbyBoss Molch and there's absolutely no color call outs for the interior and I can't find any really good photos online - the best I've found is this Youtube clip around the 30-second mark which seems to suggest a light gray such as RLM 65 Hellblau, RLM 76 Lichtblau
however, since the wires and tubes are also the same color I suspect it was repainted at some point and I don't know if that is accurate.

There is a HTML copy of the 1944 Kriegsmarine regulation for submarine paint online and if you translate it it appears that the interiors were mainly ivory or white with some RAL 7000 or 7001 in the mix.

UBoat.net states 53 were commissioned. I tend to trust them as a pretty authoritative source. It might be worth asking them to verify their information. I tried looking for the hull number on the unit on display at the "Militärhistorisches Museum der Bundeswehr" in Dresden but can't seem to find any ID. If that could be determined it could help as well.

The Dutch company ARTITEC has also two German WWII submarine models in 1:87 scale:
