1/350 USS Enterprise painting steps

I've been reading this forum all day and I'm still not sure exactly how to go about painting. Can I paint everything w/gloss paints, then apply decals and seal with some kind of flat sealer, then weather? Everything I've read seems like so many steps. However, I don't want to cut corners at the cost of my model.

You can do that, yes, if you can find the gloss version of the paint you need. It's a lot easier than using flat paints, put on gloss cote, put decals on, then put flat coat.

I have more rookie questions....
What sort of flat sealer (name) and what is Future and what is its purpose. Also, will the kit tell me what size rigging to use (have'nt received it yet)? This is the greatest site for beginners, everyone is so helpful ! Traci

For us shipmodelers, it's mostly for a gloss coat before putting on decals.

I don't think the kit will tell you the rigging size. In 1/350th, size difference in rigging is not all that noticable, IMO.
