First decision; full hull or waterline! This determines somewhat optimal construction methods.
Second: Material you are most comfortable and skilled working with? Plastic, wood, resin, fiberglass? Many scratch projects utilize some commercial components, fittings, propellers etc. Or would you rather scratch everything!
Good Luck, a very satisfying way to build: T

Tools, good ones
engineers square, straight edge, protractor, dividers, circle cutter, to name just a few.
You will also find that you get through a lot of blades, remember clean sharp cuts make lighter work.
HAVE FUN
