How long to let paint dry?

In reading build articles on model ships and planes, I've often seen mention of letting the paint job dry or cure for 24 hours, even a few days, and even longer in a few instances. Being of the somewhat impatient type, I'm wondering if such wait times are all that necessary or required for a good paint job. For gloss paints I can see why this would be the case, not so much with flats. I use an airbrush (handpainting for smaller areas and details) and Model Master enamels, haven't ventured into acrylics as yet, though might give that a try at some point. Should I learn to delay my gratification...? Thanks.

I guess it depends on what you're planning to do with it. If just assembly, "dry to the touch" is good enough for me. If applying any other liquids on top, though, I'd definitely give it a day or two to avoid any smearing or nasty reactions.
